students will submit to the instructor a topical outline and bibliography (10 sources minimum) that describes a planned research project. The final draft of the research project is due one week before the end of the term. Students may select their topic. Jeffrey Pilcher’s article suggests many prospective angles on food history. Any one of the topics in Andrew Smith’s book would make a good project. Or, if students are interested in Smith’s approach to a topic, such as Gail Borden’s canned milk, they might research a similar topic, such as the history of Spam (canned meat). Students may want to write about regional or cultural foods (Southern cooking, Italian-American foods, etc…). The possibilities are endless! Any topic related to food in American history is acceptable for this assignment. —The topical outline should include a preliminary thesis statement and list of topics that will be covered in the project. This is not expected to be a final or definitive list. Often, students realize that their original plan was too broad, and narrow their topic down to something manageable in a short college term. The outline is a plan showing what the student intends to study and write about.—-
